The next version of Apple's operating system (Snow Leopard) is coming out this year, and features OpenCL technology which allows developers to easily tap into the power of the GPU.  That's going to be a huge boost to the speed of high end applications, and it will only be a matter of time before other operating systems (Windows 7) follow suit.
